WHAT MAKES ME AN "INFORMED" FOOD BLOGGER

I am CURRENTLY a PRACTICING PHYSICIAN .

However, I did complete TWO YEARS of college studying GENERAL BIOCHEMISTRY AND MICROBIOLOGY, Food technology,Food Microbiology and Biochemistry prior to deciding that I am more inclined to the CLINICAL SIDE of things and hence decided to get into MEDICAL SCIENCE .

I did very well in medical school thereafter and am now a "kick-ass" doctor .

My interest in "Food" and the "Science of cooking" continues to this day and explains why I now have a Food blog as part of my LECINQBLOG family of Blogs

I seek to dispel FOOD FADS, food myths via this food blog.I seek also to increase health awareness by canvassing for healthier diets.

Good chef meets GOOD DOCTOR meets good writer=Informative food blog, no?

Going UN-VEGAN after 3 years of being vegan

Aug 2008...I think I ate my last three eggs in my fridge and then the next morning suddenly I just went vegan..It was an easy transition..given that I have been a vegetarian all my life....had a wealth of knowledge of how to make really really tasty balanced nutritous meals that were vegan...I used to however be an "egg and cheese crazy person"..In my mind  once i went vegan..I thought that I might end up  suffering from a "egg and cheese withdrawal" in the first few months...but SURPRISINGLY..right from day one..I NEVER MISSED the cheese or eggs...Was too busy experimenting with beans, tofu and making tofu at home and the works ..the discovery of incredible vegan foods that are all around us..I guess I was far too busy eating too many new tasty foods..quite forgot the eggs or cheese.
Three years down the line after much thought I hhave become NON-VEGAN..have been NON VEGAN FOR 7 WEEKS NOW..how does it feel?what was my first non vegan meal?Eggs ofcourse...I felt like I was committing a major sin right from day one..being NON VEGAN just doesn't feel NORMAL TO ME ANYMORE...I thought a thousand times before buying those boxes of eggs...I actually was so disapproving of myself....the whole time...even now...CAN'T WAIT TO GET BACK TO BEING VEGAN(only a month to go for that to happen..hopefully---fingers crossed)
For some reason...though I half-expected that old ecstasy to hit my senses that i used to feel when i ate eggs PRIOR TO EVER GOING VEGAN, ...surprisingly..in the past 7 weeks of eating eggs each day..NOT ONE DAY..have I felt that great kick i used to feel when i used to eggs before I ever went vegan in the first place..Same with milk..don't enjoy it as much anymore..I crave soy milk each day..and then I drink some soy milk and then I smile..LOL..no really..
Also..I HAVE BECOME SO TUNED TO AUTOMATICALLY GO VISIT ONLY SHELVES IN THE SUPERMARKET THAT hold vegan ingredients..LIKE THE PRODUCE SECTION..I now still find myself doing the same, even after i have gone UN-VEGAN temporarily...funny how I could unlearn 30 years of my food habits of being UN-VEGAN in a day..when I first went vegan ..and yet  WHAT I LEARNED IN 3 YEARS OF BEING VEGAN..i now find difficult to unlearn.....
BTW,soy curds is much more tastier than animal milk curds..totally..soy milk much more tasty than animal milk..totally..NOTHING GREAT ABOUT EGGS..cheese is fine..but doesn't matter in terms of taste--infact in the 7 weeks..i haven't bought that much of cheese at all...(for other reasons ofcourse)
And seven weeks down the line..I CAN'T WAIT TO GET BACK TO VEGAN FOOD..in the past 7 weeks I realized that i didn't miss a thing...EVEN IN THE THREE YEARS OF BEING VEGAN..NEVER MISSED VEGAN FOOD AT ALL...so yeah...
the vital question that all of you want to ask ,,is why is it that i went UN-VEGAN....in the first place?(Can't answer that yet..just yet...Will wait till i get back to being vegan for a good month and then..I shall explain it all..that way it will all look more credible)
yeah?

Oreos=vegan

Oreo cookies.
The perfectly non sweet cookie .The sugary creme in between the
cookies , not so much my favorite. But yet, oreos=the perfect
cookie=vegan
Yes, all plant ingredients!!!
Now that all ingredients are plant based, oreo essentially becomes the
vegan person's "processed food -guilty pleasure"
Yes,but given the fact that it is still processed food, makes it not so healthy.
But then, for those days, when you really want to feel like a bad girl
,who is oh so hungry , an oreo cookie is always on hand,no? But, then
an apple works better for me these days.
Three years after going vegan I have developed an aversion to
processed foods altogether.Even if I eat them just to feel that
feeling of "not being deprived of the FAST FOOD COMFORT",the taste of
them all just is not pleasing in any given way anymore. My palate has
become too sophisticated to like processed foods anymore .They taste
either too sugary or too salty or too chemically or too unfresh.A
cruncy juicy apple gives me a party in mouth.
What you eat is what you become.
P.S: oreo people haven't paid me any money to blog this entry. Moreover ,I am not really suggesting that you all eat processed foods at all.:)))

An American version of a mediterranean Lunch platter-INAUTHENTIC AT BEST!

I have been vegan for roughly two years now
Before I went vegan, I was Ovo-lacto-Vegetarian(used to eat eggs, dairy products and vegetarian food-no meat)
This Mediterranean Lunch platter dates back from back then.i DIDN'T MAKE IT.i ate this at a deli in the US.
Greek and Mediterranean food per say does use a lot of cheeses/yogurt in its recipes. But yes, there are lot of really vegan recipes too.
This platter cost 9$.Not bad..But I could make 2 such vegan platters with 9$ now!! LOL.
I took time to print the names of the ingredients on the picture .Click on picture to see a larger view and you can read the names of what all was there on the platter
Mashed potatoes can hardly qualify as Mediterranean. But Most American restaurants will tend to Americanize every ethnic platter to suit the needs of the Average American ..Honestly, I think there is NO NEED TO AMERICANIZE anything.Anyways!!

OCT 2013 UPDATE

This is ONE OF THE MOST VISITED BLOG ENTRIES on my blog..
I AM EMBARASSED BY THAT FACT.
why?
I didn't set out to type out a blog entry about a mediterranean platter at all.
I INTENDED TO CRITICIZE how IN-AUTHENTIC this particular mediterranean platter at a US deli was...plus,given that i paid nine dollars way back in 2005 or 2006,IT WAS FAR TOO PRICEY for the food i got too.
bUT,SINCE,this blog entry keeps receiving such high number of visits each month,I AM OBLIGATED TO ADD AN UPDATE AND add in some useful information to it too.

First off all,
WHAT DOES THE WORD "mediterranean" mean!
let us go check wikipedia...the easily accesible FREE encyclopedia on the net...constantly getting updated and edited by the readers themselves...
Like I always say,if you have some free change on hand,PLEASE DONATE IT TO WIKIPEDIA.

When i say, i am going and checking on a wikipedia page before writing a blog entry,IT IS NOT so that i can plagiarize from there. It is just to see, what is already out there and then PROVIDE MY EXPERT twist to that already existing information.

so,let us analyze
COUNTRIES INCLUDED IN THE MEDITERRANEAN REGION
are

a/italy
b/spain
c/france

d/morocco
e/turkey
f/egypt

g/monaco
h/montenegro
i/malta

j/tunisia
k/libya

l/turkey
m/greece
n/cyprus

o/croatia
p/albania
q/algeria
r/bosnia-herzegovina
s/slovenia

t/lebanon
u/israel
v/syria
w/palestine

x/gibraltar
y/akrotiri
z/northern cyprus

As you can see, mediterranean countries are those that sorround the MEDITERRANEAN SEA.
tons of HISTORY THERE.

So,as you can see,I have also color coded the countries into blue and red and arranged them in CUISINE GROUPS, and also using LETTERS OF THE ALPHABET.

As you can now understand,THERE ARE ENOUGH countries in the mediterranean to FILL OUT THE ENGLISH ALPHABET...

So,it is really unfair to GROUP UP 26 DIFFERENT COUNTRIES into one single CUISINE GROUP...

Each single group has a different style altogether...
so,seriously,,A MEDITERREAN PLATTER IS faulty UNLESS it attempts to include atleast ONE DISH from each of these cuisine groups...

seriously,,,as far as I KNOW..greek food is SO  DIFFERENT FROM say, egyptian food or italian food...

Something that strikes me is that MOST OF THESE COUNTRIES do use the TOMATO...surely!

So many of these cultures are SHEPERD OR COWHERD based cultures in the past 500years( all of use were vegan before the concept of rearing animals of other species came into existence but ,well, that is a whole other blog entry about FOOD HISTORY)

so,when you attempt to make a platter,PLEASE INCLUDE TOMATO BASED RECIPES IN YOUR PLATTER.

Great idea to include a dip ...rice and pasta...AND flatbreads...are big on the mediterranean menu-so please include atleast ONE TYPE OF FLATBREAD .

When I think of mediterranean,I THINK OF OLIVES..So,please include OLIVES in your mediterranean platter!
olives for sure...k?

MAYBE , I will make my own platter with ONE RECIPE from each of these countries and then make a new blog entry...yeah?

till then, please go explore cuisine from each of these countries ,which are quite DIFFERNT from one another...and don't use BLANKET STATEMENTS LIKE  "mediterranean cuisine"..
IT IS A FAULTY STATEMENT.
