Let us start with the basic question of
WHAT IS FERMENTATION?
A bigger complex food substance getting converted by microorganisms into simpler more easily digestible forms.That is what it is ..
WHAT IS THE ADVANTAGE OF FERMENTING LENTILS/BEANS?
Beans are often gassy .This is because they contain this sugar called RAFFINOSE, that doesn't have any corresponding enzymes to digest it in our body.So, this sugar travels without getting digested or absorbed in our gastrointestinal system and reaches the large intestine.Here, it sits and gets acted upon by bacteria or microbes in the large intestine and this causes gas production..and then FART FEST(to put it very INDELICATELY)
So, when we soak and grind the lentils, and then let them sit overnight, the bacteria act on the raffinose and produce gases..BUT THIS TIME AROUND, it happens outside of the body.Also, yeast in the air, does its own number on the batter as well making it all fluffy.
So, by letting these processes happen BEFORE we consume the lentils, we are SAVING OURSELVES THE FART FEST.Also, the gas that is produced by the yeast makes the BATTER all fluffy and air filled and the pancakes come out oh so fluffy and soft.YUMMY YUMMY YUMMY.
Such lentil+rice pancakes are a regular breakfast item in the SOUTH OF INDIA-THE LAND OF VEGETARIAN FOOD.Tasty,nutritious and yummy at that.
Here in the picture, you can see my dollar pancakes.They are roughly a large dollar size and as you pour the batter on a hot pan you can see the gas holes appear soon.You pour the batter, wait for the holes to appear, then turn it over, cook for just a wee bit and take it off the pan..THEN? Eat it.

The picture you see here is yet another groggy cellphone picture from yonders.The coffee mug you see there is one of my favorite cups.I purchased it for the sole reason that I got it for an equivalent of say 60 cents.LOOKED like a bargain back then in 2005.Gosh, I am getting older, it is already 2013.NOT THAT getting older is something I DREAD,it is just that, I FEEL I could have accomplished more in these past years.
When I bought this mug I DIDN'T think it was pretty or anything.But over time, each day I WOULD enjoy a good latte in the morning along with newspaper and beautiful sunrises.(ALONE TIMES ARE SO IMPORTANT IN MY LIFE.) .And, soon, I STARTED associating those pretty memories with the mug and then , soon, I STARTED finding the PRETTY FACTOR in the mug.IT IS LIKE GROWING TO FIND YOUR UGLY HUSBAND ALL HANDSOME..LOL ( I KNOW that was a cynical joke, but, hey, this is my blog)
So,yeah,now, when I LOOK AT this picture, I go into a HAPPY PLACE AND MOOD.That is what we call an ASSOCIATED MEMORY RECALL...

I am CURRENTLY a PRACTICING PHYSICIAN .However, I did complete TWO YEARS of college studying GENERAL BIOCHEMISTRY AND MICROBIOLOGY, Food technology,Food Microbiology and Biochemistry prior to deciding that I am more inclined to the CLINICAL SIDE of things and hence decided to get into MEDICAL SCIENCE .I did very well in medical school thereafter and am now a "kick-ass" doctor .My interest in "Food" and the "Science of cooking" continues to this day and explains why I now have a Food blog as part of my LECINQBLOG family.I seek to dispel FOOD FADS, food myths via this food blog.I seek also to increase health awareness by canvassing for healthier diets.
This cake is MY OWN RECIPE much like ANYTHING ELSE I EVER COOK IS...I just can't follow someone else's recipe.I have to have my own.
Buchanania nuts are interesting.NOTHING FANTASTICALLY SPECTACULAR about their taste.They are small round nuts.MUCH smaller than a peanut.(just to give you an idea of their size).They taste okay,very neutral tasting.Definitely crunchy.
In the above picture you can see that I HAVE USED them to make a nice soft chocolate sponge cake.Very comforting and tasty.

Any kind of workout that causes you to sweat will cause you to lose electrolytes from the body-both sodium and potassium.
If we do not replenish these electrolytes-dehydration with cramping of muscles is a surety.
Potassium is also required for proper cardiac functioning.AGAIN,don't go overboard on potassium supplementation for the very same reason.
After a work out, REPLENISHING POTASSIUM is just as necessary as replacing sodium.
BANANAS are a great source of potassium.Easy to eat just so too.HAVE SOME BANANAS in your work out bag.That way,soon after the work out, you can chomp on some.UNCOOKED BANANAS are also good source of vitamin C.Bananas have a lot of cellulose in them.So,if you are having constipation problems, cellulose will surely ease your bowel movement .Eat bananas IF you don't hit the dumper each day regularly.Be amazed at the results.

Anyways, this is a post swimming work out snack post,So let us talk a wee bit about swimming.Swimming uses up a LOT MORE ENERGY than your average workout.
IN ORDER to not lose weight after swimming everyday, it became necessary for me to eat carbohydrate loaded food after each swimming session.I also wanted to include potassium rich foods.BANANAS has both carbs and potassium.DOUBLE SCORE.
I WOULD SAUTE the bananas with butter or oil and add cane sugar and salt, till they caramelized .This would on an average take me 5 minutes in total.Then I WOULD gobble up the snack ..INSTANT RECHARGE!

I love pasta.I LOVE CARBS...instant source of energy.When I say "CARBS" I don't mean simple sugars, I mean, complex carbohydrates.I probably used to be a great fan of sugars in cakes but off late, I just stick to the complex carbs.
For people who work hard, carbohydrates are a MUST in the diet.JUST to keep with the high energy needs of the body.Sugars are carbohydrates too, but THOSE ARE NOT THE CARBOHYDRATES we must eat in LARGE quantities.We must eat COMPLEX CARBOHYDRATES like starch to meet our body's energy needs.PASTA fits that bill.RICE fits that bill too.
Please refrain from eating PURE SUGARS AND SWEET SODAS .
Any kind of pasta is just fine with me.
The past featured in this above picture is ANGEL HAIR pasta. and the sauce to go with it is my own creation.

Once I GET into the swimming pool, I just kick around, swim around, do underwater tricks like going to the deep end of the floor and kick myself to surface and by the end of all THIS frolicking, I WOULD HAVE SPEND HOURS in the pool.HOURS!!
So many of us don't realize that WE SWEAT even while in water.ONLY, we don't end up all sweaty and stinky .HOURS of swimming WILL make us lose a lot of weight too because we spend a lot of energy kicking around in the waterbody.We lose electrolytes too-salts-sodium and potassium need to be replenished AFTER swimming much.
Each time I GO TO THE POOL, I RETURN home RAVENOUS..super-ravenous!!Given all the kicking around I AM TIRED TOO ! No time to cook up an elaborate replenishing meal.A QUICK NUTRITIOUS MEAL is in order!
WAY back,prior to 2008,Those eggs used to be an EASY TO PREPARE SNACK .I TURNED VEGAN IN 2008,BUT prior to that, EGGS used to figure in my meals a lot.
After returning from the pool, I WOULD QUICKLY boil a couple of eggs and then split them in half and drizzle them with CHINESE green chilli sauce (mui piquante) and chinese soy sauce..would take me 10 minutes to fix and then i would gobble it up.
