WHAT MAKES ME AN "INFORMED" FOOD BLOGGER

I am CURRENTLY a PRACTICING PHYSICIAN .

However, I did complete TWO YEARS of college studying GENERAL BIOCHEMISTRY AND MICROBIOLOGY, Food technology,Food Microbiology and Biochemistry prior to deciding that I am more inclined to the CLINICAL SIDE of things and hence decided to get into MEDICAL SCIENCE .

I did very well in medical school thereafter and am now a "kick-ass" doctor .

My interest in "Food" and the "Science of cooking" continues to this day and explains why I now have a Food blog as part of my LECINQBLOG family of Blogs

I seek to dispel FOOD FADS, food myths via this food blog.I seek also to increase health awareness by canvassing for healthier diets.

CHILLI SWEET CORN SOY CRUMBLE-LECINQBLOG'S BREAKFAST SERIES
I am CURRENTLY a PRACTICING PHYSICIAN .However, I did complete TWO YEARS of college studying GENERAL BIOCHEMISTRY AND MICROBIOLOGY, Food technology,Food Microbiology and Biochemistry prior to deciding that I am more inclined to the CLINICAL SIDE of things and hence decided to get into MEDICAL SCIENCE .I did very well in medical school thereafter and am now a "kick-ass" doctor .My interest in "Food" and the "Science of cooking" continues to this day and explains why I now have a Food blog as part of my LECINQBLOG family.I seek to dispel FOOD FADS, food myths via this food blog.I seek also to increase health awareness by canvassing for healthier diets.
I experimented with making my own soymilk from soybeans within months of going vegan (which was in 2008)..The soymilk came out great.So I made tofu out of it.
Then with the little tofu I made,I crumbled it and made something called SOY CRUMBLE,much like a scrambled egg breakfast.
I used thai chillies.They were so hot, I mean JUST SO HOT! Go easy on the number of thai chillies you use per serving.
I like the sweetness of sweet corn,hence, just had to added them to the crumble.
I possibly also cooked in cilantro leaves....(if memory serves me)..they kinda wilted into the crumble to the point of invisibility.
Was it tasty?I THINK it was..kinda...The soy crumble could have been more tasty...I have improved in the SOY TOFU making deparment since then and now, the crumbles are EVEN MORE TASTIER..

Yeah, that was my own birthday cake from 2009.Yeah, it is vegan.
yeah, I MADE IT MYSELF.
The whole cake was a MEMORY recall moment of a cake that I HAD ONCE EATEN at a class party in 9th grade.A cake one of my friend's mom had made.IT WAS a vanilla sponge with chocolate frosting and candied fennel sprinkles.Truly spongy and JUST RIGHT..I will remember that cake forever.
I tried to REPLICATE THAT MEMORY by making a vegan version of it in 2009 for my birthday.
It was tasty AND I throughly enjoyed spending MY BIRTHDAY ALONE ,with just me myself, baking a cake for myself and making my own favorite birthday dinner for myself too..I LOVE SPENDING ALONE TIME WITH MYSELF, BIRTHDAY OR NOT..I love unwinding with music or reading or blogging , ALL ALONE..Allows me to find my INNER BALANCE...on a peaceful note..
I HATE PARTIES OR CROWDS especially on a special day like my own birthday.So, I don't like gifts and I DON'T ACCEPT birthday gifts..I don't take calls even..(MAYBE with the exception of my parents..)
NICE CUTE COLORFUL CAKE, NO?

Actually, this item was a REGULAR at my breakfasts in 2007 and 2008.Everyday in the morning I would make this apple crumble and eat it with sourcream (dollops of it ), all warm and sweet and oh so COMFORTING...early in the morning,yeah!
I ALWAYS HAVE BEEN AND WILL BE A HEAVY BREAKFAST EATER.As a doctor or physician, the early morning hours are the ONLY HOURS of peace and quiet where I have time for myself.The rest of the day is for my work and patients ...and yet the patients complain that they can't get appointments with DOCTORS ..goodness..WE DOCTORS ARE HUMANS TOO.
This dessert has no animal products in it..It is tastier than any NON-VEGAN recipe of the same

My green grocers always for SURE, stock fresh produce of fresno peppers at their store.
They grow the fresno peppers organically in their own farm .
Infact,all produce in their store is sourced from their own organic farm
These fresno peppers are JUST right, both when used fresh and when pickled.
I deviced my own pickling technique to suit my taste and storage needs.I store these pickled peppers in the refrigerator because the recipe has a higher than normal water content in it.
It stores well for YEARS in a refrigerator (which I found out INCIDENTALLY, when i put a jar in there and forgot to use it for a couple of years.It WAS JUST FINE when i finally used it after more than a year)
These pickled fresnos work well in salads that ask for a lil bit of piquante bite here and there.
They also work well in sandwiches especially po-boys.

I am CURRENTLY a PRACTICING PHYSICIAN .However, I did complete TWO YEARS of college studying GENERAL BIOCHEMISTRY AND MICROBIOLOGY, Food technology,Food Microbiology and Biochemistry prior to deciding that I am more inclined to the CLINICAL SIDE of things and hence decided to get into MEDICAL SCIENCE .I did very well in medical school thereafter and am now a "kick-ass" doctor .My interest in "Food" and the "Science of cooking" continues to this day and explains why I now have a Food blog as part of my LECINQBLOG family.I seek to dispel FOOD FADS, food myths via this food blog.I seek also to increase health awareness by canvassing for healthier diets.
Simply put,these are deep fried potato sticks.
Why they are called "french fries" or why they MUST be called "FREEDOM FRIES",is not my business to dwell upon right now.Let us not waste time and just get down to discussing the fries in the picture.
IF you fry your potatoes in VEGETABLE oil, these potato fries would qualify as VEGAN COMFORT FOOD.
Why is yucky oil dripping food "comforting"?
SIGH...I guess, ENERGY RICH FOODS allow the body to feel secure in some ways.Both oil and potato starch are ready sources of ENERGY.So the eyes are sending signals to the brain of the fact that the body is getting some great energy sources..LOL.
We all like texture too.So,crunchy fries just out of the frier with their CRUNCH FACTOR do the trick perhaps in terms of ENTICING THE SENSES?
Over these past ten years however, MY IDEA OF COMFORT FOOD has changed .These days I find a large bowl of fresh crunchy veggies even more comforting than fries.I AM BEING VERY VERY HONEST WHEN I SAY THIS.
BTW,I make my fries at home.WHY?The restaurant/fast food joints serve fries which taste like salty cardboard, that is why!!
Most restaurants seems to have stocks of FROZEN ,PARTIALLY PRECOOKED FRIES which are then RE-FRIED to order.Needless to say,doing this "cooking,freezing,then RE-frying" leaves them with no REAL nutrition at all.NO real taste either,except for the taste of fat and salt.Definitely NOT freshly made EITHER..Which is why they are now called FAST food?
I LOVE THE TASTE OF POTATOES more than the salt and oil.HENCE this attempt to make fries at home.So that I CAN TASTE the actual potatoes in the fries instead of hot oil and salt.
I also love my potato fries to be SOGGY...yes,I LIKE SOGGY FRIES.Another reason to try making them at home, just how i like it..soggy and freshly made

This can actually qualify not just for an afternoon snack but also as a side during lunch or even breakfast.I have eaten this at all different times.
Tofu tastes great when cooked right.Given that it is a relatively NEWER ingredient to the non-mongoloid-ASIAN palate,so many people DON'T KNOW how to cook with it and thus end up cooking it so badly that it tastes bland and foul.
It is like GIVING MEAT TO A LIFELONG VEGETARIAN and expecting them to know how to cook it.I FOR ONE, have never EATEN meat or fish In my whole lifetime of 33 years,ever.So, I am sure that if someone gave me a piece of meat and asked me to cook it, I WON'T COOK IT RIGHT.Atleast the first time around.
btw,TOFU was a new ingredient to me too when I first went vegan.But after cooking it a couple of times, I finally got my groove.
What you see in the above picture is SIMPLE stir fried tofu with peppers and onions.Use any kind of larger peppers you like.Smaller peppers will be hotter and thus can't be used in large quanities.Also, I lightly floured and black peppered the tofu cubes before stir frying,makes them crunchy(oops, I gave out my recipe tricks)
Very filling, very calcium and protein rich and very tasty to boot..TRY IT.

I am CURRENTLY a PRACTICING PHYSICIAN .However, I did complete TWO YEARS of college studying GENERAL BIOCHEMISTRY AND MICROBIOLOGY, Food technology,Food Microbiology and Biochemistry prior to deciding that I am more inclined to the CLINICAL SIDE of things and hence decided to get into MEDICAL SCIENCE .I did very well in medical school thereafter and am now a "kick-ass" doctor .My interest in "Food" and the "Science of cooking" continues to this day and explains why I now have a Food blog as part of my LECINQBLOG family.I seek to dispel FOOD FADS, food myths via this food blog.I seek also to increase health awareness by canvassing for healthier diets.
As all of you by now know, I went vegan only in 2008.So,prior to 2008, my breakfasts included eggs for most part.This above picture is from 2007.
BAGELS are my favorite baked goods-dense,chewy and they come in all flavors too.
Featured in the picture are pieces of poppy onion bagels and jalapeno scrambled eggs.
Also in the picture is a cup of SOY latte.Yes, I was drinking soy latte even before I WENT VEGAN,coz, soy latte smelled more edible than cow's milk which smelled more like body fluids(which btw it is,YEAH?)
Most people on TV always give you tips on how NOT to make your scrambled eggs rubbery and how to keep them soft and gooey...
For me, I LIKE MY SCRAMBLED EGGS-moderately DRY AND RUBBERY to a certain extent.NOT TOO CARDBOARD dry, but definitely not gooey.
If you see the picture, you can get an idea of HOW EXACTLY I LIKED MY SCRAMBLED EGGS.
I would first set up my breakfast plate and coffee and then would sit there eating it happily and slowly.
Breakfast times=peaceful alone time, introspection time!

By now, the 'AFTERNOON SNACK SERIES' has become synonymous with lecinqblog..I love me my AFTERNOON SNACKS..
on some days, it is a quick fix snack..on some days it is fruit laden..and on some other RAVENEOUS DAYS, it gets elaborate..much like this SWEET CORN AND SPINACH QUESADILLAS
This is a picture way back from 2007, the year where I HAD MY AFTERNOONS FREE AND ALL TO MYSELF.
I USED PREMADE FLOUR TORTILLAS...(the ones made without any lard)
I parboiled the spinach.
Assembling this is PRETTY EASY AND FAST AND takes a total of 12 minutes or less.
Arrange all ingredients with any cheese of choice, put another tortilla on top and heat up on a pan/oven/microwave...
cute into triangles and eat .
VERY FILLING..ALMOST LIKE A SECOND LUNCH.

Way back in 2007, I would carry around my own snacks IN MY BACKPACK. I would also carry a granny smith apple, my own water bottle full of water and a small pack of RICE CRISPIE treats that I MADE AT HOME.Just to take care of my HUNGER PANGS while I was still out and about doing things outdoors.
I have on so many occasions stood there at BUS transit centers,DISHING out my snack, and eating it while waiting for my evening bus to go home and the rest of the FOLKS waiting for the bus WOULD EYE ME GREEDILY,then go get something from the vending machine to eat.There ya go, you just wasted a dollar for nothing.PACK YOUR SNACK, people..(wow, just came up with this LINE!)
About these treats?
They were all chocolatey,and just the right bite sized treats-maybe three bites per treat?
It would take me all but 12 minutes to make a whole batch of 12 treats.One treat per day and that means, 12 days of outdoor snack needs taken care of.
Needless to say, THE BACKPACK that I USED TO carry around was HUGE..LOL...WHAT with the packed lunch,snack packs,apples and water and whatever else that needs carrying about.
The commerical rice cripsie treats have all kinds of ODD ,REFINED,SUPER REFINED ingredients which MAKES them undesirable IN MY opinion.Which is also why I TOOK TO MAKING MY OWN,atleast I KNOW what is going in it.The commercial ones are CLOYINGLY SWEET and chemical tasting.The ones I make are chocolately and just right, not too sweet too.

Butternut squash , just like other squashes, is full of goodness and taste.
RULE NO 1: Any squash essentially has a tough skin, which allows it to keep longer than any other vegetable.THAT IS A GREAT ADVANTAGE.Buy it with all other vegetables and USE IT LAST..savior!
RULE NO 2:All squashes have tons of seeds in the center.The seeds are edible, very tasty and full of protein and fiber.DON'T THROW THEM AWAY.separate the squash seeds, wash them and then dry them in sunlight by the kitchen window.Then, at a later time, DRY ROAST THEM and eat them like a snack.I DO THIS ALL THE TIME AND THEY TASTE amazingly great!
RULE NO 3: DO NOT remove peel of squash before cooking . UNLESS you are a baby or an old person with no dentition,THE SQUASH peel IS PERFECTLY EDIBLE and very tasty and full of fiber and vitamins.I see a lot of people oven-roast the squash and then scoop out only the pulp and then discard the skin.CARDINAL SIN.Don't waste the peel or seeds and DON'T oven roast things coz it WASTES ENERGY/ELECTRICITY.
WHAT ARE SQUASHES GOOD FOR?
They are full of carotene-the yellowish orangish pigment which is a vitamin A precursor.very good for you.Full of sugars, and fiber .Very nutritious!
1/UNCOOKED SQUASHES ARE sweet tasting.They are perfectly edible RAW..Yeah,I said it...TRY EATING THEM RAW...shred and eat them raw=muchos tasty!
2/great for stir fries-The sugars in squashes caramelize during stir fry and get uber tasty
3/great for stews-squashes are sturdy and can withstand stewing .CUT them into larger pieces WHILE putting in stews.
4/great for desserts or pies-both sweet and savory pies.POINT IN QUESTION, THE ever so popular PUMPKIN PIE for halloween.

Pumpkin plays a big role in halloween decorations.What I feel sad though is that PEOPLE WASTE FOOD , by carving the pumpkin,putting it out there and then later, THROWING it away.
I celebrate halloween a different way.BY CELEBRATING the nutritional goodness that a pumpkin is.
I COOK WITH IT AND THEN EAT IT.I DON'T WASTE FOOD.
HERE I HAVE POSTED TWO DIFFERENT VERSIONS OF the same concept of a pumpkin sandwich
THE FIRST ONE uses toasted bread, the second one uses a bread roll.
The first one uses toasted slices of a french baguette that I MADE MYSELF,from scratch, from whole wheat flour.
I made the bread, then sliced it after it cooled down.Then I toasted it.Then i used it to assemble the sandwich.
The second one, I made with bread rolls that I made myself too.If you look at the second picture, you can understand HOW FLUFFY homemade breadrolls can be! Yes, that much of fluffiness CAN BE ACHIEVED at home just with yeast.I USE whole wheat flour, coz , it is more nutritious and more tasty and more chewy .I LOVE SOME SUBSTANCE TO MY BREAD.I need those carbs to SAVE THE LIVES OF MY PATIENTS..LOL
BOTH potato and pumpkin ARE COMFORTING in their tastiness and FILLING factor.
overall,A RUSTIC,HEAVY DUTY, filling, comforting sandwich AND a must make for all of you readers, no matter which country you are all from.

Given the fact that I HAVE NEVER EATEN MEAT all my life, when I finally became vegan in 2008, I didn't miss any meat and thus didn't attempt to make vegan versions of meat recipes.
Most of my recipes are DEVICED by me from scratch based on my current day cravings and the ingredients on hand and also keeping in mind a BALANCED NUTRITIOUS MEAL and my personalized nutritional needs.
I was ovolactovegetarian prior to going vegan. I used to eat eggs for every breakfast prior to 2008.However, when I did go vegan, the one problem I ANTICIPATED upon going vegan was severe egg or cheese craving.TO MY OWN SURPRISE , I NEVER EXPERIENCED ANY CRAVING for either eggs or cheese..I thought I would miss them dearly, but then I DIDN'T.
Anyways,speaking of VEGAN REPLACEMENT RECIPES..two things I DID TRY making as egg replacement recipes were
a/french toast (which came out pretty well.You can find it in the archives/tag cloud)
b/omelette.
This omelette, was UBER TASTY...definitely. Filled my needs for some warm pancakey rich savory stuff ....AND I tried to give it an appearance of an omelette in terms of color,appearance and texture too..Came out well..but really, did it taste like an EGG omelette? DUH..nope,,why? because it is not...DUH!

Both Ravioli and Tortellini are just STUFFED PASTAS..much like the chinese WANTONS..Ravioli has a different shape from the tortellini, is all.
What you see above is a picture from 2006. I meticulously filled and folded and sealed my pasta into tortellini shapes and then took a picture of the whole lot before dunking them in boiling water.
Dish out the pasta once they float-that is the golden rule of stuffed pasta cooking or even stuffed steamed wantons for that matter.(when I say steamed wantons,I mean wantons that can be cooked either by boiling or by steaming)
If you look closer at the bowl, it says, "Barney says,strike up the band" awwwww....Anyways, I don't understand why babies need their own feeding bowls with all these cartoon taglines..LOL.Maybe, to keep their bowls germ free from all the adult bowls..MAYBE,,who knows.

MUSHROOM SWEET CORN SOUP-LECINQBLOG'S COMFORT FOOD SERIES-SOUP!!
I am CURRENTLY a PRACTICING PHYSICIAN .However, I did complete TWO YEARS of college studying GENERAL BIOCHEMISTRY AND MICROBIOLOGY, Food technology,Food Microbiology and Biochemistry prior to deciding that I am more inclined to the CLINICAL SIDE of things and hence decided to get into MEDICAL SCIENCE .I did very well in medical school thereafter and am now a "kick-ass" doctor .My interest in "Food" and the "Science of cooking" continues to this day and explains why I now have a Food blog as part of my LECINQBLOG family.I seek to dispel FOOD FADS, food myths via this food blog.I seek also to increase health awareness by canvassing for healthier diets.
Soup is always comforting.
Because it rehydrates.
Because it warms you in cold weather .
Because it replenishes the lost salts .
Because it is filling.
One of my favorite soups way back in 2003,2003,2005,2006 was this soup-the mushroom ,sweetcorn soup
I like CHUNKY SOUPS,soups that have things floating around in them!!
I would make it fresh-a small tiny batch and pour it into my favorite cup, and then sit there guzzling it up .
nutritious and tasty all at the same time.Just look at that picture,Isn't it enticing?
